Sofia is eighteen and from Hudson. She started baking during junior year of high school, mostly because she was bored and her mom's kitchen had a half-decent oven. Sourdough first. Then morning buns. Then a rotating menu of whatever felt right that week.
By senior year she was selling out at the Hudson farmers market every Saturday morning. The regulars get there before the booth opens. There's a woman who buys the same three loaves every week and tells Sofia they're better than anything she had in Paris.
She wants to get her commercial certification, buy real equipment instead of borrowing her mom's, and eventually open a small storefront on Warren Street. She has a name picked out. She has the menu mapped through the seasons. She has the espresso machine bookmarked.
What she doesn't have yet is the money. Certification fees, a real mixer, a deck oven, the rent deposit when the right spot opens up. Each step costs more than the last.
